Chicken & Mushroom Pie
Ingredients :
- 400g Chicken (or quorn if your a vegetarian like me)
- 750g Potatoes
- 1 Onion
- 295g tin Cream of Mushroom soup
- 250ml veg or chicken stock
- 325g tin of sweetcorn
- 3 tbsp crème fraiche
- parsley or basil
Serves 4 Ready in 45 minutes, 441 Cals 12g fat
1. Fry the onion and chicken for 5-10 minutes. Pour over the stock then bring to the boil. simmer for 20 minutes
2. while that is simmering, boil the potatoes. Then drain and mash with the crème fraiche
3. Stir in the corn, soup and the herbs in to the pan with the chicken and onions
4. Spoon the chicken into pie dishes and top with the mash. Grill until golden
as you can see, I put mine in foil containers then covered them and put them in the freezer. If you do this, make sure that they are fully defrosted before cooking. Place in the oven until warmed through.
